Valentine’s dessert

Looking for a springtime dessert to make? A Mango and Raspberry Frozen Delight is the perfect choice. It’s easy to make and bound to leave your taste buds more than satisfied.

The total preparation time to create this desert is approximately 45 minutes.

The break down of this dessert is as follows: crust, filling and a topping.

To make the crust you will need the following ingredients:

1 1/4 cups of all-purpose flour
2/3 cup of softened Land O’ Lakes Butter
1/2 cup of powdered sugar
1/2 teaspoon of almond extract


14 to 16-ounce container of slightly softened frozen sorbet
Plenty of fresh raspberries


3 tablespoons of softened Land O’ Lakes Butter
Two 3-ounce packages of cream cheese, softened
2/3 cup of powdered sugar
One cup of whipping cream
3/4 cup of peeled, chopped fresh mangoes
1/2 teaspoon of vanilla

Now it’s time to create a little piece of heaven. First, you’ll need to heat the oven to 325 degrees Fahrenheit. Next, add all of the crust ingredients into a bowl and beat at medium speed until the mixture leaves the sides of the bowl and begins to form a ball of dough.

Spread the dough evenly into an 8 or 9-inch baking pan. NOTE: Make sure your fingers are floured when doing this. After the dough is spread throughout the pan, poke holes into the dough with a fork, then place the pan into oven and bake for 20 to 25 minutes.

Once the edges are lightly browned, take the pan out of oven and let it cool for 30 minutes.

Next, spread the mango over the cooled crust and place raspberries in a single layer over the crust. After spreading raspberries, place the crust into the freezer until it is firm.

Add 3 tablespoons of butter and cream cheese to a bowl, and begin the beating process for the topping. Make sure to scrape the bowl often and slowly add powdered sugar. Continue beating until ingredients are well mixed.

Increase speed to high and gradually add whipping cream until stiff. Mix in fresh mango and vanilla. After the topping is made, spread it evenly over the raspberries.

Freeze until firm, and voilá! There you have it: a Mango and Raspberry Frozen Delight.
